Hans Epprecht started his empire when he migrated from Switzerland in 1948. He earned his citizenship during the Korean War. Then, he began working at Brewster Cheese in Ohio.

When he left the company and start his own business, he borrowed $5, 000 from his life-insurance policy. Epprecht began to deliver block of cheese to Cleveland, Ohio stores in 1958. He expanded his business, Great Lakes Cheese from distribution to manufacturing in 1984.

His company does have at least 12 plants across the U.S., and directly involved in cheesemaking production in 1984. Epprecht serves on the board of the National Cheese Institute, and also in the Advisory Board for the Northeast Dairy Foods Research Center at Cornell University.
