Elliot began his professional racing career in the Winston Cup Series at Rockingham in 1976, where he qualified 34th in a field of 36 cars. For the next five years, he raced without any corporate support. He purchased a new car in 1977, and climbed up the ranks.

In 1980, Bill Elliot got a corporate sponsorship with Melling Racing. He won his first Winston Cup race in 1983 in the Winston Western 500 at Riverside. He also won the 1988 NASCAR Winston Cup Series Championship, and earned 44 wins in the series.

During 1985-86, Bill won two Dayton 500 races with a record of four consecutive wins at Michigan International Speedway. He is the track record holder for fastest qualifying speed at Talladega at 212.809 mph and Daytona International Speedway at 210.364 mph, which are both set on 1987.

Elliot left Melling and joined Junior Johnson Associates in 1992 but left in 1995. He went to race independently from 1995 to 2000 and joined Everham Motorsports after.
