Joe Stevenson honed his skills in wrestling and Brazilian jiu-jitsu at an early age. In 2004, upon moving to Las Vegas, he was specially trained at Marc Laimon's Cobra Kai. He was competing several tournaments before focusing his career in mixed martial arts.

He participated in The Ultimate Fighter 2, won the welterweight title against Luke Commo via unanimous decision and earned a contract with Ultimate Fighting Championship. Stevenson faced several fighters such as Spencer Fisher, Mac Danzig, Diego Sanchez, and Danny Castillo, among others.

Stevenson released from UFC in 2011, and transferred to Resurrection Fighting Alliance a year later. He defeated Dakota Cochrane during the RFA 3's main event.
